Got the pork loin smoked. Let it get happy, wrapped up and in the fridge overnight. Tried some of it this morning in my version of the golden arches egg sandwich. May be a little salty. But not horrible. Just the right amount of smoke. Texture is a little different than Canadian Bacon purchased at the store. I'd make it again. Next up is on pizza tomorrow.Well.... while not in the smoker yet, will be doing a pork loin later today. With the wildfire smoke that has made it into Illinois, I'm considering setting the pork out on the picnic table and cold smoking it.

Visited by a deer as I was finishing up my dinner beside the fire…didn’t get a pic, as I was surprised that the sound of silverware on my plate did not completely spook her off. She did her evening grazing, along the perimeter, and melted away into the blueberries…

…for a couple of racks of ribs!
(and some pit beans)
They….were….MIGHTY!!!! They were TASTY!!!!!

Tonight was rotisserie roast beef. Tube to the left is a smoke tube. Meant for pellets. I stuck a small piece of cherry wood and a small piece of oak inside. It smelled pretty good standing beside the grill.
Done and in the kitchen with a few slices missing. Pretty much a nice medium rare. Was pretty yummy.
