What’s on the Grill

Of all the duck and geese I have had, they were always cooked like a turkey, roasted in the oven, a bit dry and muddy comes to mind.

I've actually made jalapeno poppers with little slivers of duck/goose breast in them, and they were pretty decent that way, but yeah, mostly they taste a lot like the shitponds they like to congregate in.
Sausages are another good way, but it's only because of all the added pork fats lol
Teriyaki marinade is another good way to cover it.
Sausage is the best way I've found to use it though.
 
Yeah ive had duck and goose myself. Both were kinda greasy in texture but i think if i had to choose, i might try the goose again. When i ate it, both seemed to be overcooked and a little dry but the goose had a milder taste.

Like @Mitch Pearrow SJMP said, pheasant was really good. Had it smoked and it almost had a ham like taste. Never tried quail or dove (or squab as some might call it). I like bison a lot, like a super lean beef with a touch of gaminess. Pretty healthy too by comparison to stock beef.

More exotic stuff I tried was Ostrich, Kangaroo, Bear and Gator. Ostrich was awful, so was bear ( stringy and greasy). Kangaroo was surprisingly decent like beef and Gator was good: like seafood with chicken qualities. I wouldnt hunt any of the 4 i just mentioned ( dont hunt anyways lol) but it was one of those things where each was offered up and " When in rome!"
Yeah, pheasant, quail and dove are all really good.
LRT and I shot us up a bunch of dove just a few months back right in his yard while we just stood there drinking beer. Cooked them up right away. Was a great time!

Gator, and 'roo are both on my list of stuff I'd like to try.



I, uhh, wouldn't be opposed to trying a nice juicy, umm......horse steak either. :hide::hide:
 
I love duck confit. But venison is one of my favorites. Haven't had it in years either but it makes a delicious shepherds pie.
Venison can be superior to steak sometimes if its a good cut, good aged deer and prepared right. I got a lot of family that hunts and the be all/end all cut is the tenderloin backstraps. You literally got to beg for a cut or two of it and will often fight someone for it lol melt in your mouth
 
I used to when I was really little. Something happened on Mutual of Omaha's Wild Kingdom. Next thing I remember is raising hell at Long John Silvers & refusing to eat. Idk? I just can't. It tastes good & I try but it makes me sick.
Such is life....scallops and butternut squash are not allowed in my home....period.
Of all the possible food sources out there, I only have TWO that are completely off the table...oh and I don’t tolerate MSG....not by choice, it’s apparently a thing.....I always wondered why I didn’t care for the way I felt after consuming anything with red sauce, or tomato based...turns out that tomatoes are high in glutamates...go figure.
....so three I guess...
 
Not a big Brussel sprouts fan , but Okra kicks ass..
Shrimp, Lobster, are not high on my list..
But fowl, beef, pork, are high on my list of favorites

Problem is that I'll eat so many of them at once that it causes problems with my....regularity....lol

Sometimes they come back out much like a BB.... small, and forceful.....like, 6 or 7 times that day...lol

I really haven't met a vegetable I didn't like. Weird as that is...
