Forgot to take finish pics.....but let's just say there's nothing left lol

The steaks were great, and I drove around the countryside for a while picking wild asparagus to go with them beforehand, so it was awesome.

Potatoes & green beans for me. Keep your bison though. It's weird. Idk?
The Bison is like....super lean, low fat, steak...not much different from lean beef...just a little different.
When I do cook it, I’m usually tempted to wrap it in bacon...to keep it lubricated. If it’s cared for when cooking, it can be very yummy, and healthy too. If it’s overcooked, it gets leathery quick.
 
I do like those birds, but something about the duck and goose ain't great IMO
As with all foods, it's all in the way that you cook them, Blink. For duck, just salt it well, let it rest for a few minutes to absorb. Leave the skin on and score it criss-cross just enough that the cut gets to the fat layer, not the muscle. For the breast, oil the meat side slightly and sear it for a quick minute on a hot iron skillet. Then lower the heat and flip it on the skin side. Let it render the fat slowly until the skin basically becomes a crackling. Then, just pass it to the cutting board, let it rest for a few minutes, slice and... heaven! You can then fry some pre-cooked sliced potatoes in the fat... nuff said!

The very best way to cook wild duck or goose is to just rip the breasts out and wrap generously in bacon. Then give it a good smoke for several hours. Next, unwrap the bacon from the breasts. Discard the breasts, and eat the bacon.

I'm pretty sure wild duck and goose is very different from farmed birds.

Of all the duck and geese I have had, they were always cooked like a turkey, roasted in the oven, a bit dry and muddy comes to mind.

I like bison.

Then again, I like lots of different game. Bison is pretty mellow and really quite good.

I don't care much for duck or goose, but they're still fun to hunt.
Yeah ive had duck and goose myself. Both were kinda greasy in texture but i think if i had to choose, i might try the goose again. When i ate it, both seemed to be overcooked and a little dry but the goose had a milder taste.

Like @Mitch Pearrow SJMP said, pheasant was really good. Had it smoked and it almost had a ham like taste. Never tried quail or dove (or squab as some might call it). I like bison a lot, like a super lean beef with a touch of gaminess. Pretty healthy too by comparison to stock beef.

More exotic stuff I tried was Ostrich, Kangaroo, Bear and Gator. Ostrich was awful, so was bear ( stringy and greasy). Kangaroo was surprisingly decent like beef and Gator was good: like seafood with chicken qualities. I wouldnt hunt any of the 4 i just mentioned ( dont hunt anyways lol) but it was one of those things where each was offered up and " When in rome!"
