What’s “cholesterol”?.... ;)

In all honesty, I had some bloodwork done(first and only time in my life) a few years ago....everyone was making faces, and noises, and under their breath commentary....all of my tests came back well within the range of perfection. I do balance my diet a bit....for every one of these dishes I make, there are many boring but “healthy” meals, and my snacks are also boring. Everything in the enchilada dish is from scratch-ish...black beans, corn, green chilis, pork, seasonings(I have a natural aversion to salt, so I use very little if any), and my mortal sin....cheese... The worst part is probably the enchilada sauce...I haven’t learned to make that from scratch, so I use a can of pre-made.:)
