What’s on the Grill

I looked at one of those this morning at the grocery store. Major STICKER SHOCK!
It actually wasn’t horrible. A ribeye or something equavalent would have been pricey for sure. T-Bones don’t seem so bad…. At least around here. And after all. It was my birthday dinner so price was no concern. The rest of the dinner was simple potatoes and a salad. Stuff we already had in the pantry and fridge.

Now. A porterhouse, which is basically a fancier t-bone. That’s probably another story. Betting that’d be pricy.
 
Today we're having veal parmigiana, grilled only to melt the cheese.
Yum. While not grilled…. Although I probably could…. I do a version of this with chicken. Baked then served over whatever pasta we have in the pantry. Sometimes homemade pasta if I’m feeling ambitious. And I’ve been thinking we haven’t had it in a while…. You might have just pushed me over the edge.

Homemade pasta is always great but I'm too lazy for that, chicken parmigiana is a good idea tho !

Some years ago we were gifted a pasta maker for our mixer. Made HM pasta super simple. What I like to do is add flavor to the pasta. Example. Adding fresh basil, spinach or parsley while making the dough. Turns the pasta green and adds flavor you don’t get with plain pasta.
 
Well….it started on the grill….I do love to vacuum seal, and freeze, a decent portion of a batch of pulled pork for use on a rainy day. I decided that today was that rainy day.
Pulled pork enchiladas!!! It’s what’s for dinner!

I love making this stuff! Pretty easy…pulled pork, can o black beans, can o corn, refried beans, green chilies, cheese, (this time) a bit of homemade BBQ sauce, a sprinkle of cilantro, and some enchilada sauce. Takes about an hour to get ready to serve up.

Enchiladas are yummy for sure.

Doing Mexican tomorrow. Not grilled though. Slow cooker.

I don’t have a way to do the vacuum seal thing, but we always freeze a portion of the pork shoulder when I smoke one. Shred it. Have a couple meals and freeze the rest in qt freezer bags. More than enough per bag for the 2 of us at a later date. Leftover pulled pork will get used for sandwiches again and almost always a BBQ pizza.

Take your freezer bags(assuming they’re some kind of zip-lock variant), fill them with what you want to store, work all the air out of the bottom that you can, and dunk them in a container of water…up to the zipper…and seal them. You just want to remove any air pockets…they are the enemy.
I do love my vacuum sealer though…one of my best investments in the last 20 years.
When I cut into the bag tonight, it smelled just like it did when I pulled it off of the smoker. It’s really, really cool.
I just cut a small bit into the outer seam of the bag, and it tears open…the smell is perfect…gets me every time.
