What’s on the Grill

BD dinner was a chocolate port sauce covered filet with roasted potatoes and stuffed peppers. The recipe we found in.......the Costco Connection magazine. it is to die for. Make a little extra sauce and have you ever had roasted potatoes dipped in a chocolate port sauce ? Add a little nice blue cheese on top for an orgasmic touch. Damn, yum.

Well, I developed a taste for Texas style rub seasoning. Especially black rub:

This came out sooo good.

I take a Venison tenderloin. I dry brine, uncovered, overnight in the fridge .

Then smoke it low for a bit. Get a heavy skillet warming up as you do.

Then crank heat 400+ and sear with fresh rosemary.

Then prepare yourself for something absolutely delicious.

The downside, if there really is one, to smoking would be..... I can shower and wash my hair to get the smoke smell off me. Still haven’t figured out how to get the smoke smell out of my nasal passages. Oh well. Pretty sure I’ll survive.... especially when I snarf down a sandwich.
