I used to do ribs. I know they’re the holy grail of bbq and smoking. And they are yummy. Just too much work for not that much meat. I’d much rather smoke a 3-4lb pork roast and do pulled pork bbq.Not sure about you guys, but something is trying to tell me that I'm overdue to make some ribs again...

We stopped doing turkey at Christmas years ago. More often or not, meat of choice has been prime rib. NOT purchased from a grocery store but from a meat guy I go to whenever we’re looking for something special. It ain’t cheap…. But more than worth it. I get ribeye steaks from this guy that make the ribeyes in a grocery store look and taste like a sirloin. Which is ok if sirloin is what you’re after.I've become the prime rib guy for Xmas. I like turkey for sure. But the prime rib is the schizzle.Oh no! I luvs me some turkey too, but prime rib is the bees knees. Never tried doing it up myself, cooking is the wife's forte. Might need to give it a go sometime, that looks delectable.
I grill all year. In winter I have to pick my days living in northern Illinois. I think the day I did these it was in the 30s. Before and after quite cold. I have grilled in single digits… but there can’t be wind.In these parts the weather has begun to turn for the better. Almost all the ice has melted.
