What’s on the Grill

I used to do ribs. I know they’re the holy grail of bbq and smoking. And they are yummy. Just too much work for not that much meat. I’d much rather smoke a 3-4lb pork roast and do pulled pork bbq.
I like the work...
I dunno about no holy grails though. Not with BBQ anyway.

If I had to choose a personal holy grail of BBQ, I would probably choose something more....beefy lol
 
Grilling Christmas dinner today. Tomahawk steak. Red snapper. Mushroom. Bacon wrapped asparagus. And a couple burgers.

I've got a Prime rib happening. Caked with coarse salt, pepper, garlic, oil, and rosemary.



And... for the first time Yorkshire puddings and believe it or not, bacon wrapped asparagus!
 
I've become the prime rib guy for Xmas. Helps that my son is not a turkey fan.
We stopped doing turkey at Christmas years ago. More often or not, meat of choice has been prime rib. NOT purchased from a grocery store but from a meat guy I go to whenever we’re looking for something special. It ain’t cheap…. But more than worth it. I get ribeye steaks from this guy that make the ribeyes in a grocery store look and taste like a sirloin. Which is ok if sirloin is what you’re after.

So the other day did grilled sweet potato and a beef tenderloin steak smothered in a blackberry/port wine reduction sauce. Served with a bowl of French onion soup. Washed down with a nice New York Finger Lake region Merlot. Apple pie and whip cream for dessert. It was all pretty yummy.

In these parts the weather has begun to turn for the better. Almost all the ice has melted.

I foresee this thread having a revival soon!
I grill all year. In winter I have to pick my days living in northern Illinois. I think the day I did these it was in the 30s. Before and after quite cold. I have grilled in single digits… but there can’t be wind.
