What’s on the Grill

I’m a foil guy…butchers paper wasn’t readily available to me when I took up the hobby of BBQ.
I wrap often, but occasionally I wait through most of the stall to wrap…not always though.
My main “smoker” is a Weber 22” kettle grill, with a Cajun Bandit smoker ring setup, like this…

My smoker. And with five acres of timber complete with oak, hickory and maple trees that keep falling. A friend that gifted me a life time of cherry..... I have access to more wood that I will ever use.

While we’re here on Sardinia, Been trying to cook like a Sardinian. Tonight was not one of those nights.

Grilled Darado. Stuffed with sliced lemon, onion, garlic, fresh basil. Salt/pepper. Before and after photos. Was quite yummy. Two thumbs up from everyone. Fish was probably swimming less than 24 hours ago.
