Should have added. I use lump charcoal rather than briquettes. And a chimney starter to get the charcoal going.Just to be different. Butcher paper. Then I use the greasy butcher paper to light my charcoal.
My smoker. And with five acres of timber complete with oak, hickory and maple trees that keep falling. A friend that gifted me a life time of cherry..... I have access to more wood that I will ever use.I’m a foil guy…butchers paper wasn’t readily available to me when I took up the hobby of BBQ.
I wrap often, but occasionally I wait through most of the stall to wrap…not always though.
My main “smoker” is a Weber 22” kettle grill, with a Cajun Bandit smoker ring setup, like this…
