Seasonings and Rubs

So kids, many of us like to eat and therefore like to cook/grill things. We each have our favorite goto spices, seasonings and BBQ Rubs. Thought maybe it'd be fun to share some of those. I'll start.
 
First up. My version of Lawrey's Seasoning Salt..... more or less. Nice thing about making your own is it is a bit healthier. No preservatives or binders. Also beauty of home brew seasoning like this. You can adjust to suit your tastes.

  • 2 Tbls kosher salt
  • 2 Tbls black pepper (fresh pepper corns ground)
  • 1/2 Tbls garlic powder (I think I've been doing about a 1/4-1/2 tsp of garlic powder)
  • 1/2 Tbls onion powder (I think I've been doing about a 1/4-1/2 tsp of onion powder)
  • 1 Tbls smoked paprika (or sweet paprika)
  • 2 tsp dried rosemary (opt)
  • 2 tsp dried thyme (opt)
If you want a bolder seasoning blend, a kick of cayenne or red pepper flakes for a combination of flavors that works well for beef, chicken, pork, you name it! I've used this on eggs.
 
Next up. Taco Seasoning. I make up a batch and always have some in a jar ready to use. Use it to season almost anything Mexican. Works with the usual ground meat for tacos or like I'm doing today, seasoning the bread crumbs for making Fish Tacos. This has the same aroma as those packets of taco seasoning in the grocery store. Just no preservative or binders like corn starch. And like the seasoning salt above. Adjust to your taste. Add something. Subtract something. Change amounts. This is just a place to start.

Taco Seasoning

Ingredients


1 tablespoon chili powder. (I have also used Ground Ancho Pepper instead of Chili Powder.)
1/4 teaspoon garlic powder.
1/4 teaspoon onion powder.
1/4 teaspoon crushed red pepper flakes.
1/4 teaspoon dried Mexican oregano. (It is different than the usual oregano)
1/2 teaspoon paprika.
1/2 teaspoon Guajillo Powder (opt)
1 1/2 teaspoons ground cumin.
1 teaspoon salt
 
My "secret" steak marinade.

Four easy ingredients off the shelf.
1. McCormick spicy Montreal Steak seasoning mix
2. Ken's balsamic vinaigrette salad dressing
3. The Old Colony Sauce (that's the secret!)
4. Hot honey (any brand)

It's always fun when a plan comes together and you get this kind of reaction.

Usually have the Montreal Steak seasoning in the pantry. And we''re almost exclusively Ken's salad dressing fans. Exception being Hidden Valley Ranch Dressing and maybe "The Original" Western Dressing.
