NMGD: 1973 Moto Guzzi 850 Eldorado (Pic Heavy)

So can you find out what kind of guitar hes using on that one video of Black Betty. The one with the Les Paul shape and Gibson embossed gold pickups ?

That guitar is an original 1954 Gibson Les Paul. Bill chipped the top off of it himself with a chisel and replaced it with a birdseye top. He installed the 1971 or 1972 Gibson embossed humbuckers himself and put the original P-90's in a Mosrite project he was working on. Later, Bill said he had the Les Paul "rebuilt" for him by a luthier named Cliff Biltz in Oxford , Ohio, "because it was worn out." The neck was replaced with a modified D'Angelico...
 
Here is what I want the Guzzi to look like...I don't dig the bags and faring and I'll never go more than 10 or 15 miles from home on her...

That's a nice bike and I sure understand why you're using it as an example.
From the photos of yours I'd suggest ... don't repaint it, polish, polish and then polish it, don't do one of those make it new restores :-)
Not going to divert your thread further with photos but my 1969 650 Triumph has factory paint, original cloth covered wiring etc and those that are knowledgeable appreciate it at shows more than the restores.

I plan on keeping everything I remove and just polish as you suggest!

It's a Tiger 650 or correctly, 1969 TR6R, the "R" designates made for the US market, the UK bike was called a Trophy. We received both UK & US bikes in Australia.
I have (somewhere) a photo taken of my wife and I taken in the same spot 40 years earlier, we were recreating that shot here. Rubber knee pads have since been added to make it correct.

Shouldn't be a problem, Sp8ctre said "and I'll never go more than 10 or 15 miles from home on her...".

Probably like my Triumph, coffee runs on sunny days. Fuel will go stale in the tank before it's all used.
