Actually, the best way to prepare it after rinsing is to bake the pieces in the oven with a solid amount of salt. If you poach it, it will easily just fall to bits, and could turn into the most disgusting mash ever. Here it is served with boiled potatoes, mashed peas, mustard and small cubes of bacon.Well.....
