Do you like Mexican?I need to find some good (but simple) crock pot recipes. I have a very small kitchen with a very small stove and a very small sink to clean up in so I don't cook much, but I need to start eating better. I love to cook, but I absolutely loathe cleaning up so I don't cook much. If I had a dishwasher it would make all the difference, but I don't.
I have my Mom's crock pot that she gave me before the estate sale when she was moving to Florida. but I haven't used it because I don't know what to cook in it besides a roast of some kind with some potatoes and carrots, which is fine, but I can't eat that all the time. I need to learn how to do more than just that. I look up recipes on line and they want way too many ingredients and spices than I'm going to bother with.
It actually was pretty good. Sorta made it up as I went along. Used what was in the fridge. That looks delicious!
Do you have any space for something like this?If I had a dishwasher it would make all the difference, but I don't.

I have a full sized portable Maytag…have had it for decades. It also gets used as a mobile kitchen island, as the one I have has a counter top mounted on it. They make “half sized” like pic above, and counter top versions as well. Counter space is lacking in my kitchen, and mine makes up for that when I need it. Plus, it’s easy…just roll it over to the sink, plug it in, hook it up to the faucet, turn on the water, add detergent, and press the appropriate cycle button. Mine typically cycles for an hour and a half. Then I empty it out, unhook it, and roll it off to the corner it lives in.
One of the best investments I’ve made in kitchen appliances…ever. YMMV, but if you sell a couple of those speakers…Maybe, but I can't afford something like that right now. Those things ain't cheap.

You bet. I think we still have 3 one quart freezer bags in the freezer just waiting to be eaten. And while this pork is good out of the slow cooker…. Ya gotta follow the directions and fry the shredded park. Do it in the pork fat and lard. Just for some color. Once fried…. The stuff is just stupid it’s so good. And not a lot of spice.Holy smokes!!! Great rainy/snowy day cook!
I can attest to the concept of freezing/storing the leftovers for future foul weather days…I have a couple of ~1.5lb vacuum sealed packs in the freezer right now. Great base protein for enchiladas too.
I do just that when I’m making sandwiches out of it, but I’m often more on the lazy side when doing enchiladas, or nachos…our version, in this house anyway. I work with smoked, not crockpot cooked, most often though…there are “crispy bits” already…just not as many.gotta follow the directions and fry the shredded park. Do it in the pork fat and lard.
