You make banana bread! So I riffed on an Alton Brown recipe and here they are: 2 lovely banana loaves with pecans, dark choc chips and a little touch of almond extract, fresh from the oven about 20 minutes ago. I'll post how they look on the inside after they finish cooling down. Banana Loaves PF s.jpg

And yes, I tore off some of the top crust in the back one.... Quality Control, you see.

Read the thread title and it reminded me of a lady I used to work with. She always bought her bananas off the dead banana rack. Skins were so black I have no clue how she peeled them. Had to be paste inside the skin. And no. She didn’t make bread with them. Brought them to work for lunch.
Truth is, if you're not squeamish about it, overripe bananas are as sweet as can be. Just smear them on toast and then some PB on top... Or peel them and throw them in the blender with some milk, vanilla extract and ice, maybe a little extra sugar and you have a real good banana smoothie!

We haven’t cooked with plantains often. But same for them. Blacker the skin, sweeter the fruit inside.
 
Those must be done cooling by now...where are the cut open shots!

And the rest of the loaf looks just as nice... nutty, chocolaty, buttery. As we would say in the industry: "nice visual, good particulates-to-crumb ratio". And just the right amount of moistness...
