Setup and test run for a new to me(sorta) smoking rig.
An old Weber Performer that I gifted to a friend didn’t really take him by storm, so he gifted it back to me.
I cleaned it up, pulled the propane assist line, cobbled together a fitting on the tube that runs into the bowl of the kettle grill(under the charcoal grate, and installed a temperature control fan. The fan runs with my wireless probe rig, and using an app, it tries to maintain a set temperature. About 90 minutes in, and it has kept things pretty steady…without doing anything but putting some bbq rubbed bacon in to smoke. I’m using a few chunks of applewood and charcoal. After putting the bacon in, it’s held temperature within 6°F…and that window is getting tighter as time goes. I haven’t touched a damper vent since I got it started.
Pretty sweet so far.
