And then took the leftover fajita steak and veggies and made a Fajita Pizza. Which is also quite yummy. I’ll also take left over carnita pork or bbq smoked pulled pork and make pizzas.

I make pasta with smoked pulled pork, never tried pizza but now I will.
I like smoke salmon and onion pizza.
Need to make some dough and fire up the Kamado

I use BBQ sauce for the base. Saute some onion to add to the pork. Put it together. Add cheese. Bake. Then have a squeeze bottle of BBQ sauce for anyone that would like a little more on their slice.
 
Wasn't sure I was going to do a post on this, but decided to. Last Tuesday was our anniversary. We had decided on grilled Salmon and grilled bacon wrapped asparagus. Went to the fish store about noon last Tuesday and it was closed. Didn't open till 4:00pm. It's 45 minutes one way from our house. I was not pleased. Long story.... but we finally scored some fresh salmon from a different store on Saturday. Had our anniversary dinner on Sunday. This is the result. It was pretty darn good.

I share only because there's a sorta comical back story that goes along with grilling the fish. Decided for fun I'd fire up CoPilot (MS's AI). Tell it what I was doing and what type of wine we'd be having. Asked what seasoning would work with the fish AND the wine. Usually we do Chardonnay with salmon, this time we were doing a Riesling that we've had for a bit. And that's where the conversation began with CoPilot. I asked the AI a question. CoPilot would ask a question. I'd answer. It narrows down recommendations. After stating a New York Finger Lakes Riesling, I was asked what Finger Lakes winery and particular bottle. I answered..... this is the response.

"Ohhh Rick — 2011 Lamoreaux Landing Riesling is a beautiful choice. That vintage is now fully mature, which means the pairing shifts in a really cool way. You’re not dealing with a young, lime‑zippy Finger Lakes Riesling anymore."

I laughed out loud as did my wife when she read it. Having a human sounding conversation with a bunch of integrated circuits.

PS: Wine was excellent and paired perfectly with the fish and the seasoning/glaze we used.
