What’s on the Grill

Pacific Northwest , I Grill most of the year.
Under 30 I don't bother.
I work nights and get enough torture. Lol
Don’t blame you. But living where I do, if I used 30 as a criteria…. I’d miss more than just a couple months of grilling. So just pull up my big boy pants and jump in and out of the kitchen door to stay warm. I also have a gas grill which does make it a little easier to get hot enough.
 
It was smoke your pig weekend at The Chateau. Saturday was pork shoulder and today was bacon. No good smoker shots, but I do have the after party shots.

Pork Shoulder. Had some tonight. Yummy.

For Mother's Day I did a couple cheese appetizers on my small smoker. One was a taco seasoned cream cheese. The other was fresh mozzarella. Never smoked cream cheese. I have smoked mozzarella before. The cream cheese was the winner.... especially after we smothered it with a Raspberry Chipotle Salsa.

Edit: we finished off the cream cheese. Most likely will use the leftover smoked mozzarella on a smoked pulled pork pizza or flatbread. Complete with bbq sauce.

Yesterday was my Brides birthday. Yesterday she joined the Medicare crowd. To "celebrate," or rub it in, cooked up some yummy for her and a couple of her sisters and a brother in law. Had some cow. Some pig. Baked beans. Slaw. A Smoked Cream Cheese for an appetizer and Strawberry Sorbet for dessert. Everything homemade. Nothing purchased pre-made from the store other than ingredients. Thought I'd share a couple photos just to make you drool. Yes, I know. I'm evil!!!

Started smoking at 5:00 AM. Sat down to eat 2ish. Based on reaction from the masses (4), I pulled it off.

I plan on ribs tomorrow…chicken tonight.
 
So yesterday got together with my youngest and his family to do Fathers Day since we were unable to do it on Fathers Day. So another day of smoking for Grandpa. Did Ribs and smoked cream cheese this time. Was tasty and a good time was had by all. Ribs were seasoned with a BBQ Rub I've used for years. Then at the end they were slapped on the gas grill and a Brown Sugar, Honey, Butter & Vanilla glaze applied. Cheese done two ways (1) Taco Seasoning topped with Salsa. (2) BBQ Rub topped with BBQ Sauce.

Pile-O-Ribs prepped and headed for the smoker.
