What’s on the Grill

Temperatures are dropping in a hurry in northern Illinois. I can still grill. No problem. Well except for those single digits days with wind chill below zero. I’m not that brave. But smoking gets pretty difficult once the bottom drops out on the temperature.
It was in the freezer for a while and we are heading into that same low temp set of months. Hence, pull it out and do it now.

I did a pork shoulder a few days back while we were in the 60s. Figuring that might be the last smoke till spring. Have eaten some of it. Will freeze the rest for when it’s cold out. Brisket will be yummy.
 
Well last time I posted this, not everyone liked what was on the menu...

I have some pork shoulder in the freezer and a brisket flat. Getting the itch to fire up the smoker. Been grilling. Just need some nice days to do the smoker. Not a given in northern Illinois in April.
If I may share some canadian barbecue (canuck for grill) wisdom: don't bet on grilling

Oh, I DO remember that one and the reactions because of what it looked like... NO matter what, just repeat to yourself: "It is indeed a spatchcocked chicken, NOT what it looks like..."

Even in northern Illinois, i pretty much grill year around. I draw the line once it drops into single digits F or teens with gale force winds. But I grill at least once a month. Been snowed on and rained on while grilling. Fortunately, grill is three steps from kitchen door.... let me duck in and out when it's too ickey to stand outside.

Pacific Northwest , I Grill most of the year.
Under 30 I don't bother.
I work nights and get enough torture. Lol
