What’s on the Grill

What a day! Up early, makin bacon, and rib rub…prepping a slab for the smoker, and in they go! Along with some beans, with some of that bacon crumbled in to them…right under the rack…
Then it’s off to mow some lawn, cut up some brush, and fill up the kindling rack by the fire pit…man I’m out of shape…
Well anyway, I found my phone and snapped a quick pic, just before pulling everything out of the smoker…

Got up at 5AM to pop some “chicky bites” in the smoker, for a work thing….

Chicken tenders, wrapped in bacon, hit with some leftover rib rub, and sauced after about 90 minutes of mesquite/hickory/applewood smoke…spicy….
It's only 8:00 here. Just had breakfast. My mouth is actually watering reading and seeing this. Good job!!
 
That’s a serious cooker right there. Could feed a small army with that one.
My dad's latest build. He put it on an old boat trailer he fixed up and painted. He also put a flat top, griddle style, on the firebox with a lid. Pretty cool. Behind the smoker (opposite side of trailer) there is a ramp and a couple rails. We can roll the giant griddle my dad built (think Blackstone, but about 8' long) up on there with the smoker.

It's a rolling bbq and burger joint!

Side note, finally able to get my trailer back. I moved a couple tractors and put my house in the equipment yard LOL
 
Niece is graduating today, so I'm on meal duty for the cookout. Doing 2 8lb Pork Shoulders, now about 6hrs into smoking, still about 6 more to go. Injected them with apple juice and cider vinegar and marinated for 12 hrs. Top one is applewood/honey rub with a mustard base as a binder. Bottom is my own mix of Kosher Salt, Black Pepper, Cumin, Brown Sugar, Chili Powder, Cayenne and Paprika with a mustard base as a binder as well.

Looks and sounds really good. Looks like I’m gonna have to fire up the smoker and do some pork.

I'm a less than average cook on most things but I can smoke pretty decently I guess lol

By now this time of year I've already smoked a good bit usually, but this is the first thing I've done this year. I got a couple 7.5lbers in my freezer and a brisket somewhere up there. Probably smoke some more in the next few weeks.

One of my favorites is just to get bone in chicken breasts and toss on some kosher salt and pepper with a touch of Old Bay and toss those suckers in with a lil Mesquite and Applewood chips for about 60-90mins or until it hits 170deg. Fast, easy and absolutely perfect

The weather in NE Illinois is finally getting nice enough to do more smoking. We’ve got some pork in the freezer just begging to be slapped in the smoker. Something I’ll be trying sometime soon is pork belly. Gonna try and do some bacon for the first time.
