What’s on the Grill

I have yet to do that, but have had a flame up on a gas grill get out of hand, with a beer in the other :whistle:
I have to think that if that guy hadn't been using a gas grill his ribs may not have burned to ash like that lol

He'd likely have forgotten to maintain the fire and it would have burned out before burning up the ribs maybe...

I haven't had any ribs burn up like that, but I have certainly forgotten food on the grill due to too many beers lol
 
Smoked something called a Brisket Flat a few days ago. I think of that as a brisket with training wheels. Plenty of flavor. But I got it a little bit dry. So far we’ve had it sliced along with some veggies. Had it diced in a chef salad. Tonight I’m making up something. Sautéing some onions and poblanos. Diced up some of the beef to add to the veggies. Serve on folded flat bread with lotsa cheese. Kinda a NE Illinois pretend cheese steak. Hey…. Making this one up as I go. Anyway. Here’s before and after shots of the beef.

Nice looking bark! The flat tends to not have the same amount of marbling that the point does, they do tend to be a bit drier because of that, but they're still pretty tasty. I bet that makes for some nice Philly cheesesteak-like sammies!
