Ya know. Sometimes there nothing wrong with simple. Had some pork chops in the freezer and a can of enchilada sauce in the pantry. Google what to do:

Found a Food Network recipe. These are usually fairly busy recipes, but not this one. As follows.
Pork Chops
Enchilada sauce
Cheese
Diced onions
No seasoning noted in recipe.

Oven bake chops and sauce. 20 minutes. Take out. Add cheese and onions. 10 more minutes in oven. Serve.

My contribution to recipe:
I salted and peppered chops. Browned both side in cast iron skillet. Poured sauce over chops. Tossed in 350 oven for 20 minutes in said skillet. Take out and add cheese and sautéd onions. 10 more minutes in oven . Served over Spanish Rice.

Sometimes a simple meal is just perfect.

I love that stovetop-to-oven process and cast iron skillets are unmatched for it. I used to think there should be a special cookbook for that - but really the technique is the recipe, no need to describe procedure. You could just put fifteen or twenty ingredient combinations on a recipe card and call it done.

Shortest cookbook ever.
