I’m sooooooo glad I learned how to do this!
Smoked with Maine applewood that I cut myself, and quince wood from my backyard.
Six hour, bacon covered, drip beans too.

Thanks guys! They were fantastic! I was fortunate to have a good, solid cook at 230°-265° for about 6 hours. It started with drama though. When I threw in a few lit coals to get things started, I didn’t get the lid on square....I went in to do prep work, and came out to a blazing hot smoker. I got it right back in control though, and sailed smoothly through the rest of the day. I do like me some BBQ!
