For maple neck guitars that have maple fingerboards, are those covered in some kind of finish? Seems like they have to be since they are very glossy. I have some ideas I want to tackle for a guitar project, and it involves painting the fretboard.

Yes, lmaple and other light fingerboards usually carry a coat of laquer to protect them from becoming dirty.

Yep, often something durable like poly. Fretless bass players sometimes coat their fretboard with epoxy so they can use roundwound strings without eating away the playing surface. Occasionally you'll see a fretboard in an opaque solid color.

Never seen a fretboard done with a sunburst (or a fade...), but that might be kinda cool in a weird way.
