Christmas Eve Pizza

Made pizza tonight. As promised in another thread, thought I’d share my process.

Ingedients:
Potato (yes potato)
Clove garlic
Olive Oil (about 2tbs)
Bread flour (2-3 cups)
Basil (palm full)
1/2 cup butter milk
1/2 cup water
Pkg Yeast
Salt (tsp)

Boil potato with clove of garlic.When done run potato thru food mill or ricer. Add water/milk to potato. Let cool. In separate bowl add yeast, salt and basil to flour. Add dry ingredients to wet in a mixer..... or do the whole thing by hand if you really want to go old school.

I did my dough Sunday morning. Put in gallon zip lock bag and refrigerated till about two hours before cooking.
 
I keep the sauce simple. Can tomato’s and Tbl paste. Add some basil, garlic and anise seed. Tonight I also added a bit of rosemary. I don’t measure. I go by smell. When it smells like pizza sauce, it’s good to go.

Follow up to last nights foray into pizza baking. I killed the oven. Spent 1/2 of Christmas morning locating and resetting the thermal fuse/breaker. We did find it. The day was saved. On to more baking. Tonight. Homemade bread and roasted veggies. Tackled by my better 1/2. Grilled ribeye steaks. Curtesy yours truly. And for dessert, cherry jubilee.
