For $15 or less, just change it out….The only thing I'm not 100% happy about is the volume doesn't start rolling down until about '3' on the knob, then it drops abruptly.

That would drive me nuts personally. I fiddle with the volume and tone knobs a lot, so having a taper that didn't kick in until that far down the dial would make me mad.

I was playing it last night and it does start tapering off earlier, but it's very slight and it really becomes "drastic" around 3-4.
Are they audio taper or linear taper pots? The behavior almost sounds like a linear taper pot.
Look to see if there is the letter “B” stamped on the pot. If you see a “B”, the pot is linear taper; if it is stamped with an “A”, it is an audio taper pot.I have no clue!!!!!

Keep in mind, solder may cover the stamp.
The behavior you’re describing seems consistent with a linear taper pot.
Admittedly, this is a long shot. It is customary to use audio taper (A) for Gibson-style harnesses, especially the volume pot. Though, some do like to use a linear taper, especially if they like to use the guitar’s volume knob for swells. So, it would actually be a little unusual to use a linear taper pot in your situation, but it would be worth it to check it out.
Audio according to the builder.
