I have often been seen to say that a good guitar player will sound
like himself on any guitar.
What do you think?

A guitarist will sound like himself on any guitar.
But, not every guitar he plays will sound the same.
I was surprised to find that my EMG equipped Schecter and my PAF clone equipped Gibson SG are hard to tell apart if the amp settings are not adjusted...
No argument there. I have no reason to disagree with you. Different pickups often do have remarkably similar tonalities.
I will say, when I play my guitars, I still sound like me, regardless of the guitar I play.
As for my guitars, My HB-30 and Les Paul sound the most alike. Those two would be very easy to confuse. My Jackson and my SG Original are somewhat different from the others. The SG with the mini-humbuckers sounds much different from any others. As expected, the Strat is the most unique sounding of any of them. When I play them, my intrinsic styling, phraseology, attack, vibrato, and technique persist (the "sounds like me" part). But, the the tonality and character of the sound, itself, does change (the "sounds like pickup X, potentiometer Y, or capacitor Z" part).
