So at the moment, I'm running my jvm210 head into a crate 412 cab. I'm running 16 ohms. I was just curious that if I go from 16 ohms to like 8 or 4 ohms. How much of a difference would it make, if any.?

Avoid mismatching impedance, there is no advantage to it.
When the output taps on the OT are matched to the expected speaker load it results in the correct, or as-designed match to the output impedance to the power tubes.
Thats it; using a matching impedance to correctly match the what the output tubes "see" as the load from the speakers.
There are lots of discussion on whether you can run mismatches without damaging anything, and what generally happens when you do.
None of them I have read are about improvements in tone.
If you are familiar with any type of manual transmission - running in too high a gear makes the engine work too hard, lugging, over loaded.
Too low a gear and the engine over revs. Not exact but gives the idea.

I was just wondering because currently I'm running 16 ohm from my head to 16 ohms on the cab. All that's self explanatory. But I was just mainly wondering what's the big difference between running at 16 ohms vs 4 ohms? My head and cab can handle either or.
Listened to this video in studio head phones. To me it sounds link the 4 ohms had a slightly deeper tighter tone and the 16 ohms was a bit brighter and a little bit more on the treble sideThis guy always has a relevant answer, it seems.
I think I hear at certain times, the 16 ohm samples as the equivalence of turning up the presence control of an amp ever so slightly... very slightly! But the demo of switching back and forth from 4 ohm to 16 ohm was not consistent enough, IMO. I think it would have been better if Johan had been able to use 2 separate but identical cabs and speakers, one cab wired 4 ohms and the other at 16 ohms. Then use an A-B switching system to quickly switch between the cabs.This guy always has a relevant answer, it seems.
