When I restring my guitars with headstock like the Godin one shown in this picture.

In order to get proper slack to the tuning peg, I always go to 7th fret place the side palm of my hand straight up with fingers stretched out, this gives me proper length for all strings. Make sure first you pull the string tight against the bridge and through the post first before checking for adjusting proper slack in string. Also I use a Graphite pencil to rub in slots of nut before restringing to prevent binding and buzzing.

For doing my Strats and Tele

The Low E string A, D strings, I pull the strings through the peg making sure snug at bridge, then I pull back one fret to get proper slack for adjustment.
For G,B,E strings do the same above except for adjustment pull back each string 2 frets. Making sure you Graphite the nut before installing strings.

I use three fingers stacked side-by-side at the first fret for E/A/D and 4 fingers stacked side-by-side fot g/b/e.

For vintage style tuners on a Stratocaster, each string is cut to a specific length....
