What happened to the black & white puddings?
 
You know, one thing we don't see often is a seafood based sausage. The Japanese have one, more as a snack. But why not a full bore Fish & Chips sausage with the cod and french fries ....you could even sour them up via pickling them, then dunk in tartar sauce. YUM!

Another outlier idea is a classic Shepherds Pie sausage

Nobody wants to see a Spotted Dick sausage. That would be wrong.

But perhaps there could be a future for other cake or pudding-based dessert sausages
 
Great ideas guys especially the fish & chips, however I would have to include the mushy peas for correctness, not sure I've ever had green sausages before!
