I started to look at the sheet music and was thinking I'd build a solo based on the melody. Then I thought bugger that it's a jam. I just wailed away in C Maj pentatonic. I don't know why they are exactly the same but if I thought C Major rather than A Minor it seemed to flow better.

C Major pentatonic is just fine. Whatever gives you pleasure and makes you want to play.

I don't really think about it, I play around the melody or follow the chords. Natural and harmonic minor, Dorian and whatever fits (my usual go to) are equally good.
